How to make basic Parathas/ Flat Breads & Knead Dough

Ingredients

  1. 250 g Flour, another 50 gms to dust
  2. Pinch Of Salt (Optional)
  3. 1 Tsp EVO Oil (for Kneading)
  4. 150 ml Water, a little more for kneading
  5. 1-2 Tbsp EVO Oil (For final cooking) or Ghee

Procedure

  1. Mix the Salt and Oil to the flour
  2. Make a well and gradually add water, and mix
  3. Mix until the entire flour forms into a large lump of dough
  4. Take out the rough dough on a plain surface, moisten your hands and knead it until soft and springy
  5. Keep the dough aside for 15-20 mins
  6. Make small balls and dunk them into some flour
  7. Roll out the balls (3 inch diameter) and apply a Tsp of oil. Fold over into Half moon
  8. Apply another tsp of Oil and fold again to form a small triangle
  9. Dunk the dough triangle in the flour and roll it out evenly, until thinner
  10. Dust off excess flour and place on a hot pan
  11. Cook one side and flip to cook the other side (each not more than 2 mins) over medium heat
  12. Apply EVOO on a side and turn over to repeat the same on the other side. Cook until Golden
  13. Makes 6-8 Parathas
  14. Serve with sides of your choice
  15. Boil the lentils until cooked (soft) (alternately, the same can be done in a pressure cooker)
  16. In a pot, add the bhuna masala to the cooked dal and bring it to a boil
  17. Add the Bhuna (Roast) Masala (Spice Sauce) and grate in the ginger, season with salt as per taste
  18. Tempering-
        1. Heat cumin seeds in another pan and add in the ghee
        2. Add in the garlic and fry for until slightly golden
  1. Pour the Hot Tempering ghee on the Dal
  2. Finish off with freshly chopped coriander
  3. Serves 4-6 People
